Milk Toffees

My mum is a master at this and every festival this is included into the list of sweets she makes..I have been having this home recipe, but was not in a mood to try it out since I don't have a sweet tooth. But after much dilly dallying I went ahead with it since the necessary ingredients were available at home.It's not a very difficult thing to make but you have to get the consistency right when it thickens.



This is called "Milk Toffee" or "Kiri Toffee (in Sinhala)
1 tin condensed milk
450g Sugar
a drop of Vanilla essense
water
Cashew nuts

Method
Into a pan preferably non stick add the sugar, condensed milk and half a tin of water filled into the condensed milk tin and bring to a boil on moderate heat.

When the mixture starts to thicken add the vanilla essence and the cashew nuts and mix further.

While the mixture is boiling a tablespoon of butter can be added.

When the bottom of the pan is visible when mixing taking it off the fire and flatten it on a buttered tray. (the tray should not be very high)

mark squares and let it cool.

According to Z's office mates it tasted yummy..For a first time attempt it was successful.

Cocoa Balls

Its been sometime that I have written..Its been ages..August and September have been mixed months for me and my family.With 3 funerals and one being so so unexpected.
Anyway I have been quite caught up with my parents being around here for Eid. This has been the first Eid ever that we have been away from the extended family. We missed the nutty things we do normally on Eid Day with my uncles and cousins, but it was an all new experience.I have written down some of the recipes that my mum make sand is trying out currently..

This is my personal favourite (since this is the first ever recipe I used for baking) and is liked by everyone at home.
Its called Cocoa Balls-


3 Oz Cocoa Powder
2 1/2 Cups Flour
1 1/2 Cups Sugar
1 Cup chopped cashew nuts
1/2 lb butter
2 large eggs

METHOD

Beat margarine and sugar together, add the eggs, flour, cocoa, and lastly the nuts.

Chill this dough for 30mins (Chilling is required to prevent sticking)

Using bits of the chilled dough, form into small balls, roll the balls in granulated sugar,add top with half a cashew nut, and bake on greased pans, until done (Moderate Oven). I take it off when it is three quarter done!!!
Yield small balls – 100
